This sweet old thing was inspired by the tingling taste and subtle creaminess of our semi-fermented Ti Kuan Yin. But we took it a little further, adding a delicate dessert note to send your tastebuds sailing into nostalgic waters. It’s like a comforting bowl of rice pudding with sugar and spice, only without the bowl, or the rice. . . it’s not really a pudding either.

A level teaspoon per cup.
Steep for 3-5 minutes at 80° C.
Can be infused 2/3 times experiencing a different taste on each occasion.
